Low Carb Pizza - St. Louis Style Imo's Thin Crust Pizza

Only 10 Net Carbs

Check out this great low carb pizza recipe. I live in St. Louis, MO, USA, a city known for thin crust pizza. A good thing about thin crust pizza is it generally means less carbs. I have come up with a low carb pizza recipe that taste amazing and had to share.  It's pretty similar to the St. Louis pizza chain called Imo's.

I've done the low carb thing before and I've tried various low carb pizza recipes but I've never had low carb pizza like this.

With pizza you can pick various ingredients you just want to make sure they are low or zero in carbs. I'm posting this based on what I like but feel free to use your own ingredients.

What you need:
  • Mission brand Carb Balance Flour Tortilla - Size Medium (6 Net Carbs)
  • Imo's Shredded Provel Cheese (You can use mozzarella or whatever cheese you choose) (Less than 1 Carb)
  • Pepperoni Slices (ZERO Carbs)
  • Bacon (ZERO Carbs)
  • Sausage - Banquet Brown n Serve Beef (ZERO Carbs)
  • Green Pepper - Partial  (~1 Net Carb)
  • Tomato Sauce - No Salt added - 1 spoon (~2 Net Carbs)
  • Artificial Sugar / Sweetener (ZERO Carbs)
  • Pam Canola Oil Cooking Spray (ZERO Carbs)
Total Net Carbs: 10 (Approximately)

Directions:

Spray Pan with Canola Oil and cook the Mission brand Carb Balance Flour Tortilla on low to medium heat for several minutes.  Flip until browned.  Should become firm.

Add sauce.  I use a no salt tomato sauce.  I only use about a spoonful due to the carb content.

I use a dash of artificial sweetner which I sprinkle on the sauce because Imo's pizza has a bit of a sweet sugar taste.

Now I add most of my toppings.  Make sure to cook them first.  I put the toppings down before the cheese so that the cheese can be added on top of the toppings in order to hold them in place.

Now Cheese followed by remaining Toppings

Spray Pizza Pan with Canola oil no stick spray and place pizza on pan.

Place pizza in oven and turn on BROIL (~500)

Cook the pizza for about 5 minutes.  Oven temperatures vary but goal is to melt cheese.  Topping should have already been cooked so we only need to melt the cheese and get the toppings nice and hot.  Remove pizza when ready.

Cut Pizza (St. Louis style is square cuts but I stick with rectangle)

As you can see we have a nice firm crispy crust.

Eat, and feel good about yourself.  ONLY 10 CARBS!
